At Superior Catfish we always strive for the highest quality. This process starts at the farm. We enter all of our farmers into a Quality Assurance Program that insures that the highest quality of feed is used and no chemicals are used that would be harmful for human consumption.
Before harvesting the catfish, the farmer must have multiple “on flavor” samples before we will process their fish. This flavor testing is done by a team of trained samplers. After the catfish are seined, they are brought to the plant and sampled again before processing to insure that the product is 100% on flavor.
After arriving at the plant, the catfish are run across automated fillet processing machines to remove the fillet from the backbone. Trained employees then hand trim the nugget from the fillet and inspect the fillet for bones or other quality issues. Irregular fillets are sorted out to give the customer only the best looking product.
Immediately after the catfish is filleted, it is placed in a slush ice solution to await either ice packing or freezing. The freezing process begins with the catfish being injected with trypolyphosphate to insure a longer shelf life. Before the product is placed in boxes, it is run through a vat of ice water to put a thin coating of ice or “glaze” on the fish. This is done to insure against freezer burn. We pack our fresh catfish in bags placed in boxes filled with ice. We will only ice pack for customer’s immediate order to give the customer the freshest, longest lasting catfish available.
